If I attack a ship with an airpline in a sector where it´s two ships (both ships has aa). Does both of them defense against that airplane? Or only the one I attack?

they can both attack but if one of them aborts you the other one can't keep shooting at the same plane

Yes this is the only way swordfish don't wreck the entire german fleet before it leaves anchor

So you want to always use the highest dice AA value first, for the better chance of a kill, rather than go with the weaker AA value first and merely get an abort.
