Okay, I realize this is likely very fallow ground, but I must grasp what's going with the Tiger's Overrun Ability.

By my reading of the FAQ:
Q: If a Tiger I uses the Overrun ability on a Soldier, does the disruption happen immediately or does a face-down Disrupted counter get placed instead?
A: The disruption happens immediately. Put a face-up Disrupted counter on the Soldier.

The soldier is normally entitled to defensive fire, but according to Special Abilities p.26 Abilities Trump Rules: When a special ability and a rule say different things, the special ability wins.

It seems quite clear to me that the SA Overrun should eliminate the soldier's ability to fire defensively. Otherwise, what's the point to the overrun ability? Is it just an ability added on to make the Tiger even more over-costed?

Since the unit who is firing defensively can choose which hex to make the attack, they could choose to do it before the Tiger enters their hex (and hence disrupting them.) So while it is true they couldn't fire defensively when disrupted, it would be argued that the soldier unit would choose to make their defensive fire in the Tiger's starting hex before the Overrun occurs.

Which means they only have the option to fire at the Front Armor, correct?

Correct - the Tiger must be facing the hex it is trying to enter.

A Tiger's Overrun ability disrupts one infantry in a square it is entering. Does this take place before or after the infantry gets its defensive fire?

The defensive fire occurs first, then the Overrun ability takes place (if appropriate).

That's from the FAQ link above (not the FAQ itself, but the answers below it).

You could ask what they mean exactly, but from what they've said so far, the infantry could take a rear shot at range 0.
